I've seen lots more bad restorations than good ones. Lots of scummy guys in that sphere who like to polish turds and sell them off to unsuspecting casuals for big profit. Computers are simple, it's just 1s and 0s. Which ones are you going to remove? The centre console? Who cares if it fails, as long has HVAC is separate controls.
If you remove it, it's essentially the same as if it failed. So just use it until it stops working.

The fact that motorbikes, cateringhams are still in existance (brand new) and road legal somehow in a highly regulated place like Australia suggests that you still can get simple fun cars.

Come to the third world. We have the "new tech" from 10 years ago and further. Last company truck was a 2018 D23 Frontier with a YD25 commonrail engine, but not even a DPF on it. Wife could tell when I stopped outside our 8' concrete wall with glass spikes to open the gate because she could smell the truck before she could hear it.
It did have blue tooth, airbags, central locking and a backup camera but those aren't legal requirements.
We have a variety of commercial vehicles selling without airbags, or any emissions anything and with cassette tape decks as of last year. Haven't checked anything recently.
