    I don't understand where the flavor is supposed to come from in carbonara.

    Egg, water, cheese, and pepper?

    I bought a ready carbonara. It was good, but it was more an Alfredo. Definitely had cream.

      It looks overcooked.
      You should think of the egg as the cream, it has to stay creamy.
      Repeat it with me:
      >STAY
      >CREAMY
      And the eggs have to be fresh and good enough that you're able to eat them raw, because they won't really be cooked if you do in the traditional (and now illegal in all European States, including Italy), or you could pre-cook them aside as a 'zabaglione salato'... if your eggs are good, it's good enough to drain the pasta, then chuck guanciale, eggs, and pasta back in the pot and use the residual heat (off the stove) to solidify a bit the eggs.
      Get good at it, and use good eggs because you're taking risks and should be aware of them, and you'll get a dish that literally can't be replicated in a restaurant because it's now illegal to serve raw eggs.
      Btw, same deal with Tiramisu, it's never going to be the same.

            That said, with capers and anchovies it's quite tasty, and I often add zucchini and mushrooms (give them a light cook in a separate pan first) too, but that's not carbonara, it's something else.
