Because the people who grew up with those cars are dead. They're "parade vehicles" for boomers now.
Shift the decades forward, 60s and 70s muscle cars were selling for 6-figures easily because boomers grew up with them and have money to spend as they realize they're nearing death. They're not sought after by people under 30 because they've never fricking seen them.

I think the difference though is that the internet has resulted in a cultural standstill in a lot of ways. The way that things stop becoming cool to newer generations is via a lack of exposure to those things to people who are young and impressionable and might still find them cool. People are still getting exposed to classic muscle cars, which means that there is still going to be a contingent of people who really like them and think that they're cool. Rat rods are a Gen X thing. They started as a backlash against the boomer show rod Boyd Coddington/Chip Foose look that dominated in the 90s and early 00s. Gen Xers couldn't afford to build a six figure street rod so they'd just slap something together with parts out of a junkyard and call it a day. Then when Xers finally came into money as a generation they turned rat rods into their own six figure custom scene.
